I have to admit, I am not much of a breakfast eater. On a typical morning, I drink a cup of coffee and call it good. What more do you need, right?! I am fully aware of the saying, “Breakfast is the most important meal of the day.” Of course, it also is the hardest meal for me to eat. When I was younger, I use to not even be able to hold down an apple for breakfast… I think I’ve come a long way. In my morning routine, sleep is priority, not breakfast… which results in me using time that should be allocated to breakfast to sleep instead. I have a feeling a lot of people can relate to this.
I have always been aware of what I put in my body; however, breakfast is my unique struggle as I don’t consume anything… equally as unhealthy. I’ve noticed in my morning work schedule, I am constantly lacking energy, even with the help of coffee. So I started trying to pre-making breakfast the night before work. When I wake up, all I have to do is put it together – brilliant! One of my favorites so far is strawberry nanacream granola bowl. Look at how pretty it is!
Ingrediants (Makes 1 serving):
- 1 frozen banana
- 6-7 frozen strawberries
- 1 cup of granola of your choice (I used a pumpkin flax)
- 1 teaspoon of vanilla
- 1/4 cup of cottage cheese (if you hate cottage cheese, you can sub for greek yogurt…you can’t taste the cottage cheese – promise)
Directions:
- Add granola to serving bowl.
- Cut frozen banana in half and put in blender (I use a Nutri Bullet) along with frozen strawberries.
- Add cottage cheese to blender.
- Add vanilla to blender.
- Blend well, if consistency is liquidy, add ice or more frozen strawberries.
- Once you are satisfied with the mixture, add to bowl.
- Done! (Unless you want to make it look pretty like I did, then slice each fruit to put on top and sprinkle granola.)
*If you are a coconut lover, add coconut shavings to your bowl – Yum!*
This is a super easy breakfast to take with you if you’re in a hurry. It usually takes me 5 minutes to put together before I run out the door. I recommend not using a granola that is high in sugar, as you are already adding plenty of natural sugar. Try this recipe and play around with different flavors!
